Fossil Thief is a contemporary American Pale Ale that masterfully balances a modern hazy aesthetic with a classic, hop-forward profile. It centers on a vibrant tropical trio of Riwaka, El Dorado, and Vic Secret hops, delivering layers of pineapple, passionfruit, and stone fruit. Built on a foundation of neutral pale malt, the beer achieves what the brewer calls a 'spiky pincushion softness'—a medium-bodied, velvety texture that remains exceptionally drinkable. While it embraces a soft mouthfeel, it retains the style's signature clean fermentation and moderate bitterness, ensuring a crisp, refreshing finish that belongs in a connoisseur's collection.

Appearance. Hazy pale gold (6 SRM). Large, frothy white head with excellent retention and significant lacing.

Aroma. High intensity hop aroma featuring prominent notes of pineapple, passionfruit, and ripe peach. Underlying subtle scents of grapefruit and resin are supported by a low, neutral grainy malt sweetness. Esters are low and clean.

Taste. Initial impression is a burst of tropical fruit—specifically pineapple and mango—followed by a light citrus zest. Malt flavor is low and bready, providing a lean backdrop for the hops. Moderate bitterness is well-integrated and never harsh. The finish is dry and clean with a lingering tropical hop aftertaste.
