Appearance. Pours a hazy, nearly opaque pale straw to golden color (SRM 3-5). It is topped by a white, frothy head with low to moderate retention, leaving slight lacing as it recedes.
Aroma. High intensity aromatics of fresh-cut pineapple and creamy coconut. A moderate lactic sourness is present, accompanied by subtle earthy and leathery funk characteristic of a wild fermentation. No hop aroma or diacetyl.
Taste. The initial impression is one of bright, tart acidity followed by juicy pineapple. The mid-palate features a distinct, rich coconut flavor that provides a perceived sweetness. Malt flavors are low and bready. There is no hop bitterness or flavor. The finish is dry and acidic with a lingering tropical fruit aftertaste that remains clean.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a refreshing, prickly sensation. A noticeable lactic acidity creates a sharp but pleasant mouthfeel, while the coconut additions lend a subtle, smooth creaminess. No alcohol warmth is detected.
