St. Salvatore Bianca is an elegant Witbier that captures the classic Belgian essence through a delicate balance of grains and botanicals. The presence of unmalted wheat provides a soft, bready foundation with subtle hints of honey. A refreshing brightness emerges from the addition of zesty orange peel and fragrant coriander, which lend a perfumy, citrusy, and herbal complexity. Appearance. Very pale straw to light yellow color (2-4 SRM). Noticeably cloudy with a milky, whitish-yellow glow from suspended starch and yeast. Features a dense, white, moussy head with good retention.

Aroma. Moderate intensity featuring bready, grainy malt aromatics and a touch of vanilla sweetness. Pronounced citrus notes of orange zest blend with the perfumy, spicy-herbal character of coriander. Low yeast-derived esters provide a light pome fruit background.

Taste. Initial impression of soft, bready malt and grainy sweetness. Followed by zesty orange-citrus flavors and a subtle herbal-spicy coriander note. Hop bitterness is very low, providing just enough structure to support the spice. Finishes refreshingly crisp and dry without any lingering bitterness or harshness.
