St. Paul Blond is a refined Belgian Blond Ale that captures a vibrant, fruity essence with a classic abbey-style foundation. It presents an inviting bouquet of pear and apple esters, complemented by distinct citrus notes derived from intentional dry-hopping. The aroma is deepened by a characteristic sweetness reminiscent of light sugar and subtle baking spices. On the palate, a smooth base of grainy-sweet malt provides a rounded foundation for peppery yeast phenols and earthy hop accents. Its elevated carbonation creates a creamy, mouth-filling texture that leads to a notably dry, crisp finish, ensuring high drinkability while maintaining a complex fermentation profile.
Appearance. Pale gold (4–5 SRM) with a large, dense, and exceptionally creamy white head. Features excellent head retention and persistent Belgian lacing. Unfiltered nature provides a slight, attractive haze.
Aroma. Moderate to high intensity featuring a fragrant mix of pear and green apple esters. Citrusy hop notes from dry-hopping are prominent, layered over a grainy-sweet malt base with hints of caramelized sugar and spicy, peppery phenols.
Taste. Initial impression of light, honey-like malt sweetness and sugary notes, quickly giving way to a fruity profile of orange zest and lemon. Balanced by moderate spicy-peppery yeast character and a light hop bitterness. The finish is notably dry and clean with a lingering soft malt aftertaste.
Mouthfeel. Medium body with a round, smooth, and somewhat creamy texture. High carbonation provides a mouth-filling, bubbly sensation. Very low alcohol warmth, contributing to its refreshing character.
