A cervejeira St. Bernardus foi fundada em 1946 por Evarist Deconinck na cidade de Watou, na região da Flandres, na Bélgica. Inicialmente, produzia cervejas para outras marcas, mas em 1959 começou a produzir suas próprias cervejas e já em 1992, começou a produzir cervejas com o mesmo processo e receitas da lendária cervejaria trapista Westvleteren. Una birra in puro stile abbazia, che vede il mantenimento, ancora oggi, dei vecchi metodi e della ricetta originale nelle fasi di produzione. Fatta maturare 3 mesi prima dell’imbottigliamento e poi imbottigliata senza filtrazione, si presenta con un imperscrutabile color mogano, mentre l’aroma rimanda molto al malto e al caramello.
In bocca ha un gusto unico, con un bouquet che spazia dai sentori di nocciola a quelli di frutta matura come l’uva sultanina o la banana, in un dolce finale leggermente affumicato.
È una birra da intenditori, ottima da meditazione o accompagnata a formaggi piccanti o stagionati o alla selvaggina.
