Tot op het bot gemotiveerd heeft de brouwerij verder gebouwd aan de oorspronkelijke bieren van Westvleteren, hoewel ze natuurlijk nooit identiek zijn geweest: zo putten beide brouwerijen uit een andere bron en het water, dat bijna altijd meer dan 90% van het bier uitmaakt, is nu eenmaal ook mede smaakbepalend. Zet nu een St. Bernardus Abt 12 – met een alcoholgehalte van 10,5% per volume, neemt u de pet maar even af! – naast het ’12 graden’ van Westvleteren – als u er aan kunt komen – en ontdek zelf dat in de loop der jaren de bieren uit elkaar zijn gedobberd als twee continenten op drift, elk in haar eigen prachtige richting. Opmerkelijk genoeg is het niet commercieel gebrouwen Westvleteren 12 graden bier pas verkozen tot het beste bier ter wereld – opmerkelijk, omdat het bijna onmogelijk is het bier te kopen. De St. Bernardus Abt 12 echter is het jaar rond en gemakkelijk te verkrijgen.
Diep donkerbruin, met een schuimkraag als door een driesterren kok geschapen en een overweldigende smaak, is St. Bernardus Abt 12 een bier van eenzame klasse, van een zeldzame schoonheid, misschien wel één van de beste bieren ter wereld. Gezien haar achtergrond verbaast dat natuurlijk ook niet. Maar boven alles proef je in St. Bernardus Abt 12 iets dat je zeer zelden ontdekt: pure en onbaatzuchtige liefde, een volstrekte toegewijdheid aan het raken aan perfectie. Het is een riskante opmerking, maar ik denk echt dat als Onze Lieve Heer zelf eens aan het brouwen zou slaan, Hij met St. Bernardus Abt 12 op de proppen zou komen om er vervolgens uitgebreid en volledig voldaan van te genieten.

La St Bernardus Abt 12 es una Belgian Quadrupel, una cerveza de abadía con segunda fermentación en botella y con un 10% de ABV. Otra de las joyas de la escuela belga. Esta es la historia de St Bernardus. En 1904 los monjes de la Abadía Catsberg en Mont des Cats huyeron de Francia para no pagar impuestos por sus negocios allí. Decidieron mudarse al norte de Bélgica, a la región de Watou. Originariamente se dedicaron a la elaboración de quesos que luego vendían para financiar su comunidad. Esta fabrica de quesos se llamo “Refuge Notre Dame de St Bernard”.
Cuando en 1934 los monjes de St Bernardus deciden volver a Francia y venden su quesería a Evarist Deconincky. Junto a una licencia para elaborar sus cervezas por un periodo de 30 años. Junto al maestro cervecero de origen polaco, Mathieu Szafranski, comenzaron a elaborar sus cervezas siguiendo las recetas originales de los monjes. Utilizando además la levadura original. En 1962 la licencia se renovó por otros 30 años.
Es a partir de 1992 cuando los monjes toman el control de la producción de sus cervezas. Coincidiendo con la implantación del sello de calidad de las cervezas trapenses. Este sello solo se otorgaba a aquellas cervezas que se elaboraran dentro de los muros de una abadía. A partir de entonces, las cervezas de la cervecería se comercializaron bajo la marca St Bernardus. Este período estuvo marcado por la incertidumbre, ya que la cervecería se esforzó por revivir su fortuna e inyectar nueva vida a su marca.
Desde 1998 y hasta la actualidad, se ha pasado de una producción de unos cientos de miles de litros al año, hasta llegar a los 4 millones de litros de 2017.
