Polymorphic is a vibrant Double IPA that showcases a powerful triad of Citra, Motueka, and Cascade hops. The sensory journey begins with an explosion of tropical fruit and bright citrus, where the Citra hops deliver lush mango and grapefruit notes, complemented by the distinctive lime zest and mojito-like character of Motueka. Cascade adds a classic floral and piney underpinning. Despite its hazy appearance and 8.3% ABV, the beer remains remarkably drinkable, balancing a soft, grainy malt backbone with a firm, clean bitterness. The finish is dry and hop-forward, leaving a lingering impression of fresh resin and sun-ripened citrus.

Appearance. Deep gold to light orange (SRM 7-9). Features a thick, persistent, off-white foam head with significant lacing. Characterized by a pronounced, opaque haze.

Aroma. High intensity hop aroma dominated by fresh lime zest, grapefruit, and tropical mango. Subtle pine and floral notes from the Cascade hops emerge as it warms. Low grainy malt sweetness and light fruity esters are present in the background, with a clean, very faint alcohol warmth.

Taste. Explosive hop flavors of citrus pith, tropical stone fruit, and lime. Low, soft malt character provides a neutral base. Bitterness is moderately high but smooth, avoiding harshness. The fermentation is clean with a medium-dry, lingering hoppy finish and a touch of resinous aftertaste.

Mouthfeel. Medium-full body with a soft, pillowy texture. Carbonation is moderate. Displays a gentle, well-integrated alcohol warmth without being hot or solventy. Very low astringency.
