The use of spelt and rye introduces a distinctively rustic grain character, offering notes of earthy sourdough and a crisp, peppery snap. On the nose, a classic Belgian yeast profile delivers bright citrus esters—reminiscent of lemon zest and green apple—intermingled with moderate floral hop notes and a touch of cracked black pepper. Its highly attenuated body is bone-dry and effervescent, driving a clean, snappy finish.
