This Wild Specialty Beer is a complex, crimson-hued exploration of acidity and deep fruit integration. Aronia berries lend a dark, earthy complexity and subtle tannin, while Pomegranate provides a sharp, jewel-toned tartness that cuts through the robust 9% ABV. Zesty Orange notes brighten the mid-palate, lifting the vinous character derived from extended Wine Barrel aging. The wild fermentation introduces layers of farmhouse funk and leather, creating a sophisticated interplay between fruit esters and oak-driven vanillins. It is a bold, structured sour with a bone-dry finish that leaves a lingering impression of dark fruit skins and refined wood.
Appearance. Deep ruby to dark purple with magenta highlights; clear to slightly hazy; thin, pink-tinted head with poor retention and minimal lacing.
Aroma. High intensity; pungent lactic acidity and Brettanomyces funk featuring notes of leather and barnyard; bold aromatics of dark berry, tart pomegranate, and fresh orange zest; significant vinous oak presence with hints of red wine and vanilla.
Taste. Sharply acidic initial impression; flavors of tart aronia and pomegranate dominate, followed by a citrusy orange brightness; very low malt presence; no hop bitterness; complex wild character with earthy and funky notes; lingering dry finish with noticeable oak tannins and fruit skin character.
Mouthfeel. Medium body with a slight alcoholic warmth; moderate carbonation; noticeable tannin-driven astringency from the fruit skins and wine barrels; crisp and refreshing despite the high gravity.
