Incipient (Apricot) is a masterful Wild Specialty Beer that showcases the depth of Speciation’s solera process. A bright, tangy profile of fresh apricot flesh and fuzzy skin leads the sensory experience, supported by the soft, bready foundation of malted wheat. The open fermentation introduces a complex array of funky Brettanomyces character, ranging from light leather to earthy minerals. Foeder aging contributes a structured woody dryness and a whisper of vanillin that rounds out the sharp lactic acidity. This sour wheat ale balances the stone fruit’s natural intensity with a puckering, bone-dry finish, creating a vibrant and layered sensory profile that evolves with every sip.
Appearance. Deep golden to soft orange (7-10 SRM) depending on fruit concentration; pours with a moderate white head that dissipates quickly; hazy to nearly opaque from wheat protein and apricot solids.
