This Straight Sour Beer highlights Speciation’s house cultures, delivering a sharp, clean lactic acidity reminiscent of tart lemon and green apple. A foundation of crackery pale malt provides a subtle, bready structure that balances the vibrant, zesty fermentation character. Without the distraction of added fruit or hops, the nuanced interplay of rustic esters and soft oak tannins from the foeder aging shines through. It finishes exceptionally dry and crisp, leaving a lingering, refreshing citrus tartness that invites another sip.
Appearance. Pale straw to light gold (2-3 SRM). Slight haze from house wild cultures. Moderate white head with relatively poor retention due to high acidity; effervescent.
Aroma. High intensity lactic sourness. Dominant scents of lemon zest, tart apricot, and green apple. Low crackery and bready malt character. No hop aroma. Subtle rustic and earthy notes from the wild saison yeast blend.
Taste. Strong, clean lactic sourness is the primary impression. Complementary bready and grainy malt flavors provide a light backbone. No detectable hop bitterness or flavor. Pale fruit character including citrus and tart apple. Finishes very dry and clean with a lingering acidic snap.
