Sovina 500 FDL Double IPA
This Double IPA, a celebratory collaboration for Flor do Lúpulo, presents a modern, hazy interpretation of the style. The aroma is explosively aromatic, driven by a specialized combination of selected yeasts and hops that yield intense tropical fruit and citrus notes. Despite its 7.4% strength, the beer maintains high drinkability. The malt profile is deliberately clean and supportive, allowing a complex hop character to dominate the palate. It delivers a firm bitterness without harshness, finishing dry and crisp. The mouthfeel is smooth and medium-bodied, reflecting a balanced fusion of yeast-derived esters and vibrant, resinous hop oils.
Appearance. Deep gold to light orange-copper (8–12 SRM); hazy to opaque with a moderate-sized, persistent, off-white head that leaves consistent lacing.
Aroma. High intensity hop aroma featuring prominent notes of tropical fruit, citrus, and resinous pine. Supportive neutral, grainy malt in the background with light fruity esters from the specific yeast strain; no solventy alcohol.
Taste. Strong and complex hop flavors of mango, grapefruit, and stone fruit. Low, clean, unobtrusive malt character. Moderately high bitterness that remains smooth rather than harsh. The finish is dry with a lingering hoppy and bitter aftertaste; low fermentation fruitiness.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is moderate-high. Features a restrained, smooth alcohol warmth without any harsh hop-derived astringency.
