This Imperial Stout is a decadent exploration of depth and refinement, transformed by twelve months of aging in Port Wine barrels. It presents an intricate tapestry of sensory cues where the robust backbone of dark chocolate and rich caramel malts meets the elegant influence of seasoned wood. The barrel integration introduces sophisticated notes of dark berries and sweet plum, echoing the vinous complexity of a fine fortified wine. Appearance. Jet black and completely opaque (40 SRM). Topped with a thick, deep tan head that shows moderate retention and leaves viscous legs on the glass, indicating high alcohol and body.

Aroma. High intensity with a rich blend of bittersweet chocolate, espresso-like roast, and deep caramel. Strong esters of dried plums and raisins are elevated by a distinct Port wine vinous character and a hint of oaky vanillin. Very low earthy hop aroma.

Taste. Initial impression is intensely malty with dark chocolate and scorched grain. Mid-palate reveals layers of sweet plum, black cherry, and caramel. The Port Wine barrel influence is prominent, adding a vinous elegance that cuts through the moderate bitterness. The finish is long and warming with a lingering sweetness and a refined, fruity aftertaste.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A noticeable but smooth alcohol warmth spreads across the palate without being sharp or solventy.
