This elegant hybrid bridges the gap between viticulture and brewing, presenting a sophisticated Saison base transformed by a year in French oak with Chardonnay. Bright aromas of tropical pineapple and crisp golden apple lead into a complex profile of creamy vanilla and subtle oak spice. The mixed-culture fermentation lends a nuanced acidity that balances the ripe orchard fruit flavors, while time spent on the wine lees imparts a delicate, sophisticated nuttiness. Effervescent and dry, it finishes with a lingering interplay of vinous character and rustic farmhouse charm, making it a stellar companion for creamy cheeses or custardy desserts.
Appearance. Pale straw to light gold (4-6 SRM). It features a dense, rocky white head with excellent retention and Belgian lacing. The clarity is slightly hazy due to the mixed-culture fermentation and unfiltered nature of the blend.
Aroma. High intensity with a complex bouquet of pineapple and golden apple esters. Prominent French oak character provides notes of creamy vanilla and subtle spice. A delicate nuttiness from the wine lees is present, alongside light peppery phenols and a vinous Chardonnay quality.
Taste. An initial impression of ripe orchard fruit and tropical pineapple followed by grainy, rustic malt. The hop bitterness is low, allowing the mixed-culture acidity and French oak tannins to provide structure. Flavors of vanilla and oak spice are well-integrated. The finish is very dry and highly attenuated, with a lingering vinous aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. There is a noticeable but well-integrated alcohol warmth from the 7.5% ABV. A slight creaminess from the lees and oak contrasts with a crisp, bone-dry finish.
