This sidra de copa eschews the rustic funk of traditional natural ciders for a brilliant, clean sensory profile achieved through months of slow fermentation and natural clarification. The aroma is dominated by the pure, fresh character of organic apples, while the palate offers a bright, crisp acidity and a refreshing finish. It presents a sophisticated balance of fruit-forward sweetness and sharp vitality, making it a modern, sparkling interpretation of regional fruit traditions that excels in a wine glass.
Appearance. Color ranges from pale to medium gold (SRM 2-5). Features brilliant clarity with no sediment. Carbonation is moderate, often presenting as a fine-beaded effervescence with a quick-fading white mousse.
Aroma. Moderate to high intensity of fresh apple character. Prominent notes of ripe green and red organic apples with a subtle floral undertone. Fermentation is clean, lacking the heavy sulfur or acetic notes of traditional sidra natural. No hop or malt character is present.
Taste. The initial impression is one of bright, crisp apple flavor with a clean, acidic edge. The malt-like sweetness is replaced by natural fructose, which remains balanced and off-dry. Hop bitterness is absent (0 IBU context). The fermentation character is very clean, leading to a lingering, fresh apple finish that is dry and refreshing without harsh tannins.
