This Double IPA delivers a vibrant sensory experience centered on a powerful trio of hops. Simcoe Cryo introduces a concentrated punch of earthy pine and resinous depth, while Citra provides bright layers of grapefruit and lime zest. The addition of Moutere enhances the profile with tropical passion fruit and stone fruit notes. At 8% ABV, the beer remains remarkably lean and drinkable, utilizing a neutral malt base to ensure the hop intensity remains the focal point. Expect a clean, dry finish with a lingering bitterness that defines the style, perfectly balancing modern hop saturation with classic structural integrity.
Appearance. Gold to light orange-copper (7-9 SRM) with a moderate-sized, persistent white head that exhibits excellent lacing. Clarity is mostly clear, though a light, modern hop haze is present.
Aroma. High intensity hop aroma featuring prominent notes of resinous pine, grapefruit, and tropical passion fruit. Malt character is low and neutral, providing a grainy, cracker-like backdrop. Fermentation is clean with minimal fruity esters and a soft, integrated alcohol presence.
Taste. Initial impression is an explosion of citrus and tropical fruit followed by an assertive piney bitterness. Hop flavors of lime, passion fruit, and damp resin dominate. The malt is soft and unobtrusive, offering a clean, supportive graininess. The finish is very dry with a long, resinous, and bitter aftertaste that remains smooth and lacks harshness.
Mouthfeel. Medium body with a smooth, slightly oily texture from the hop oils. Carbonation is moderate-high. A light, pleasant alcohol warmth is present but well-restrained, with no perceived hop-derived astringency.
