This Double IPA presents a vivid sensory thrill, lead by a sophisticated hop profile. Nelson Sauvin introduces elegant notes of white wine and crushed gooseberries, while Mosaic and Idaho 7 provide a layered foundation of blueberry, ripe papaya, and resinous pine. The experimental HBC 630 adds a unique dimension of sweet cherry and peach candy. On the palate, a firm bitterness balances the lean, crackery malt base, finishing dry and crisp. The 8% ABV provides a subtle, integrated warmth that carries the aromatic complexity. It is a bold, modern expression of the style, focusing on hop saturation and a clean, punchy finish.
Appearance. Light orange-copper color (SRM 7-9). Slight haze with a moderate-sized, persistent off-white head that leaves consistent lacing.
Aroma. Prominent intensity. High hop character featuring white grape, passion fruit, and tropical citrus. Secondary notes of sweet cherry and red berries. Clean, neutral, grainy malt background with a faint, smooth alcohol presence.
Taste. Strong hop flavor echoing the aroma with peach, berry, and pine. Moderately high bitterness that remains clean. Low supportive neutral malt. Finish is dry with a lingering hoppy and resinous aftertaste.
Mouthfeel. Medium body with a smooth, soft texture. Medium-high carbonation. Restrained, smooth alcohol warmth is present but well-integrated.
