Tide is a vibrant Wild Specialty Beer that showcases a complex, multifaceted fruit profile against a backdrop of crisp wild fermentation. The sensory experience is dominated by an explosive tropical medley featuring distinct layers of Pineapple, Mango, and Guava, complemented by brighter citrus notes of Lemon and Orange. Undertones of Banana and Papaya add a creamy aromatic depth, while Passionfruit and Apricot provide a sharp, tangy edge. The wild yeast influence introduces a delicate funky complexity and a firm lactic acidity that cuts through the fruit intensity, resulting in a refreshing, highly attenuated, and bone-dry finish.

Appearance. Pours a hazy, pale golden-orange with a slight sunset hue derived from the Mango and Papaya additions. Features a moderate white head that dissipates relatively quickly, leaving minimal lacing, consistent with the high acidity of a wild fermentation.

Aroma. High intensity aromatics of fresh Pineapple, Passionfruit, and Lemon zest. A noticeable wild character provides notes of hay and a light earthy funk. Secondary esters of Banana and Apricot blend seamlessly with the lactic tartness, creating a complex, acidic, and deeply fruity bouquet.

Taste. Initial impression is sharply acidic and refreshing. Intense flavors of Guava and Mango lead the palate, followed by the tartness of Orange and Pineapple. The fermentation is very clean but characteristically wild, with no residual sugar. Hop bitterness is very low, allowing the fruit tannins and acidity to provide balance. The finish is short, crisp, and bone-dry with lingering notes of stone fruit.

Mouthfeel. Light-bodied with a crisp, effervescent mouthfeel driven by high carbonation. There is a noticeable acidic prickle on the tongue and a very slight astringency from the fruit skins, which enhances the overall dryness. No alcohol warmth is perceived.
