This English Barley Wine celebrates three years with a profound expression of English Maris Otter malt, transformed through a marathon ten-hour boil into a syrupy, mahogany masterpiece. The sensory experience is dominated by rich, concentrated depths of toffee and caramel, reminiscent of a dense Christmas cake. On the nose, intense notes of sun-dried raisins and dark cherries meld with subtle hints of cinnamon and warm toffee. The palate follows with luxurious layers of malt complexity and dark fruit esters, finishing with a smooth, lingering warmth. It is a decadent, full-bodied sipper designed for slow appreciation, balancing massive malt weight with soft vinous character.
Appearance. Deep mahogany to dark copper with brilliant ruby highlights; pours with a low, creamy, off-white head that shows moderate retention and develops thick legs on the glass due to high viscosity and alcohol.
Aroma. High intensity; rich, deeply toasted Maris Otter malt provides a base of bread crust and heavy toffee. Pronounced dark fruit esters of raisins, plum, and black cherry are joined by a spicy hint of cinnamon and a soft, rounded, well-integrated alcohol presence.
Taste. Initial impression is one of intense malty sweetness and viscous texture. Complex flavors of caramel and burnt toffee lead into a mid-palate of spice and dried fruits, evocative of traditional Christmas cake. Hop bitterness is moderate-low, providing just enough structure to support the malt weight, while the finish is long, sweet, and moderately vinous.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, syrupy texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, reflecting the strength without being harsh or fusel.

For our 3 year anniversary we decided it was finally time to brew our first Barley Wine.
Brewed with 100% English grown Maris Otter then boiled overnight for 10 hours the beer is sweet and syrupy and to style with some modernisation on the side.
On the nose there is big hit of raisins, cherry with hints of toffee and cinnamon. Taste wise the toffee and caramel become more apparent with Christmas cake like flavours bursting throughout. With no additional sugars added, this beer is all about the malt and what a long boil can do to enhance it.
Designed for those colder nights, this beer is perfect to sip and enjoy in front of a fire or the heater.
Best enjoyed at 12-16C.
