The Judicator is a monumental Imperial Stout, defined by an intricate triple barrel aging process involving Rum, Bourbon, and Red Wine casks. This 15% ABV powerhouse presents a dense tapestry of treacle and dark chocolate, interwoven with the vinous depth of red berries and the charred wood of oak. The sensory profile is exceptionally deep, featuring a luscious, velvety body that carries intense flavors of figs and raisins, transitioning into a persistent vanilla finish. The complex interplay of spirit-driven warmth, dark fruit esters, and roasted malts creates a harmonious, boozy experience that remains luxurious and integrated rather than sharp.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, deep tan head of moderate retention. High viscosity and alcohol content are evidenced by prominent legs on the glass.
Aroma. High intensity with a rich, complex blend of bittersweet chocolate, espresso, and thick treacle. Strong barrel-derived notes of vanilla, charred oak, and spicy rum are present, alongside a vinous red berry character from the wine casks and dark fruit esters like raisins and plums.
Taste. Intense roasted malt flavors of cocoa and burnt grain are balanced by a heavy treacle and toffee sweetness. The palate is layered with red berry acidity, spicy rum, and caramel bourbon notes. Bitterness is moderate-high but well-integrated, leading to a long, bittersweet finish of charred wood and warming alcohol.
Mouthfeel. Very full-bodied with a chewy, viscous, and motor-oil-like texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, providing a luscious and velvety mouth-coating sensation without harshness.
