Indigo presents a decadent, sensory-rich experience, leaning into its identity as a massive Imperial Stout. The inclusion of Cocoa Husks drives an intense bittersweet chocolate core, while the Hazelnuts contribute a toasted, praline-like depth. Vanilla softens the high 12% ABV, weaving through the dark malt layers to create a cohesive chocolate cake-like profile. Expect a deep, viscous liquid that coats the palate with notes of espresso and dark fruits. The finish is lingering and indulgent, balancing a firm roasted bitterness with the creamy, sweet characteristics of a luxury confection, resulting in a harmonious, dessert-forward profile.
Appearance. Jet black and opaque (SRM 40+). It pours with a thick, dense, dark tan head with moderate retention. Due to high viscosity and alcohol, significant legs are visible on the glass.
Aroma. High intensity aroma dominated by bittersweet chocolate, cocoa, and toasted hazelnuts. Strong vanilla bean sweetness blends with deep roasted malt notes of espresso and subtle black liquorice. Low esters suggest dried figs or raisins, while hop aroma is very low. Alcohol is noticeable but clean and well-integrated.
Taste. Initial impression is moderately sweet and cake-like. Rich malt flavors of dark chocolate and fudge from the cocoa husks are primary, supported by a distinct toasted nuttiness. Vanilla provides a creamy, confectionery layer. The roasted malt character offers coffee and burnt grain notes, providing a medium-high bitterness that balances the residual sugars. The finish is lingering with warmth and a nutty, chocolatey aftertaste.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious, and viscous texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is present, enhancing the richness without being sharp or solventy.
