Cold Lies is a striking American IPA that exemplifies the Cold IPA sub-style, utilizing a clean lager yeast and a lean grist of pilsner malt and rice to provide a crisp, ultra-dry canvas. This minimalist base allows the trio of Citra, Mosaic, and Simcoe hops to dominate the profile. Expect a vibrant sensory experience defined by bright citrus, tropical layers of passion fruit and papaya, and a distinct resinous pine. The finish is sharply bitter and exceptionally clean, highlighting the brewer's intent for a high-impact hop showcase that remains incredibly drinkable and refreshing.
Appearance. Pale gold (3-5 SRM). Brilliant clarity with a tall, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit and lime from Citra, accented by Mosaic's tropical passion fruit and papaya. A supporting layer of Simcoe provides resinous pine. Malt is low and grainy, reflecting the pilsner and rice base, while the fermentation is exceptionally clean with no detectable esters.
Taste. Hop-forward with immediate flavors of citrus peel and tropical fruit. A medium-high bitterness cuts through the subtle, cracker-like pilsner malt and rice sweetness. Simcoe adds a woody, resinous depth. The finish is very dry and crisp with a lingering, clean bitterness and an absence of fermentation byproducts.
Mouthfeel. Medium-light body with a snappy, crisp texture. High carbonation enhances the refreshing quality. No astringency or harshness, with a very subtle, smooth alcohol warmth.
