Catch Some Rays is an indulgent Straight Sour Beer that balances sharp lactic acidity with a lush, peaches and cream profile. It opens with an intense, sun-ripened peach character driven by massive puree additions, supported by a delicate, biscuity malt backbone. The fermentation is clean and tangy, yet the experience is rounded out by a massive, creamy vanilla punch that lingers on the palate. Despite its 6.8% ABV, it remains approachable, offering a bright, fruit-forward sensory experience that feels like a dessert-inspired refreshment, perfectly integrating tartness with luxurious stone fruit sweetness and a smooth, vegan-friendly finish.
Appearance. Pale gold to light amber (3-5 SRM) with a significant haze from the fruit puree. Pours with a dense, white head that shows moderate to poor retention, typical of high-acidity styles.
Aroma. High intensity aromatics dominated by fresh peach and sweet, creamy vanilla beans. A sharp, clean lactic sourness provides a bright, lemony backdrop, while a subtle, crackery malt presence remains in the background. No hop aroma is detectable.
Taste. Initial impression is a clean, bold lactic sourness that quickly transitions into a massive peach fruit character. Low, bready malt flavors provide a brief support before a huge, creamy vanilla finish takes over. The balance is firmly skewed toward acidity and fruit, finishing off-dry with a lingering peach and vanilla aftertaste. No hop bitterness or flavor is present.
Mouthfeel. Medium body with a notable creaminess and smooth texture. Carbonation is moderate, providing enough effervescence to lift the heavy fruit profile. A light, pleasant alcohol warmth is present but well-integrated.
