Sofia Electric Brewing Bulwark is a massive Imperial Porter that transforms the classic American Porter profile through two years of extensive barrel maturation. The influence of the Cognac barrels is immediate, offering opulent layers of burnt toffee, dried apricots, and dark fruit esters. These notes are bolstered by the Bulgarian oak, which imparts a profound depth of milk chocolate, vanilla, and a distinct nuttiness. The result is a complex, warming sipper where the intense malt backbone is tempered by the refined spirituous character of the wood, concluding with a rich, velvety finish that highlights its formidable strength and artisanal blending.
Appearance. Very dark brown to opaque black in color (35-40 SRM) with deep garnet highlights. Pours with a thick, creamy, tan-colored head that shows moderate retention and fine lacing.
Aroma. High intensity aroma dominated by rich Cognac and dark chocolate. Prominent notes of vanilla and toasted oak from the Bulgarian wood mingle with burnt toffee and dried apricot esters. Underlying malt character suggests roasted coffee and nutty hazelnut, with very low earthy hop presence.
Taste. Initial impression is of luxurious dark chocolate and sweet toffee. The mid-palate reveals the Cognac influence with plums and dried fruits, followed by a secondary layer of vanilla bean and spicy oak. Bitterness is moderate but balanced by the massive malt body and residual sweetness. The finish is long and warming with a smooth, lingering chocolate and spirituous aftertaste, lacking any acrid or harsh roast.
Mouthfeel. Full-bodied and viscous with a velvety, creamy texture. Carbonation is moderately low, providing a smooth mouthfeel. Significant alcohol warmth is present but well-integrated, lacking harshness. Very low astringency.
