This vibrant Wild Specialty Beer captures the essence of summer through the inclusion of Bulgarian Apricot. On the nose, a refreshing lactic acidity intertwines with the succulent, stone-fruit perfume of the apricots, underpinned by a faint, earthy funk characteristic of a wild fermentation. The palate is defined by a bright, tart snap that elevates the natural fruit sugars without becoming cloying, transitioning into a crisp, bone-dry finish. Effervescent and light-bodied, it balances the rustic complexities of wild yeast with a clean, approachable sourness, making it an exceptionally refreshing choice for warm afternoons.
Appearance. Pours a hazy, pale gold to soft orange with a distinct apricot tint (SRM 4-6). The white head is moderately tall but dissipates relatively quickly into a fine ring of lacing, typical for high-acidity ales.
Aroma. High intensity of fresh, ripe apricot dominates the initial bouquet. Behind the fruit, a moderate lactic tartness is present, accompanied by subtle barnyard funk and dusty hay from the wild fermentation. Malt character is very low, providing a simple, crackery backdrop, while hop aroma is absent.
Taste. The initial impression is a sharp, clean acidity followed immediately by juicy Bulgarian Apricot flavors. The fruit character is authentic and slightly tangy, lacking heavy residual sweetness. Low malt presence of white bread dough. Hop bitterness is non-perceptible, allowing the sourness to lead the structure. Fermentation character is complex with mild funk and lemon zest. The finish is bone-dry and refreshing with a lingering stone-fruit aftertaste.
Mouthfeel. Light body with high carbonation that creates a prickly, refreshing sensation. No alcohol warmth is perceived at 4% ABV. A very slight fruit skin astringency adds to the perceived dryness without becoming harsh or puckering.
