12 Months Behind Schedule is an imposing Imperial Stout that commands attention with its luscious, viscous presence. Pouring jet black with a persistent deep tan head, it releases an intense bouquet of espresso and bittersweet chocolate. The sensory journey is defined by a decadent sticky sweetness reminiscent of burnt sugar and caramelized malts, layered with complex notes of dried figs and raisins. A robust backbone of roasted grain provides a necessary counterpoint, leading into a lingering finish of dark roast coffee. At 13% ABV, it offers a smooth, integrated warmth that emphasizes its massive, velvet-like texture and complex ester profile.
Appearance. Jet black and opaque (40+ SRM). Features a thick, dense, dark tan head with moderate retention and noticeable legs on the glass indicating high viscosity and alcohol.
Aroma. Intense and complex; dominated by deep roasted notes of dark chocolate and fresh espresso. Prominent burnt sugar and dark caramel sweetness are balanced by esters of raisins, plums, and black currants, with a clean, warming alcohol presence.
Taste. Rich and chewy initial impression of burnt sugar and dark fruit. Mid-palate reveals layers of bittersweet chocolate and toasted grain. The finish is moderately sweet but balanced by a firm, roasty bitterness and a lingering aftertaste of coffee and dark cocoa. Very complex with no harshness despite the strength.
Mouthfeel. Full to very full-bodied with a velvety, luscious, and sticky texture. Carbonation is low to moderate. Noticeable and smooth alcohol warmth provides a comforting glow without being hot or solventy.
