This Experimental Mead presents a sophisticated Nordic profile, bridging the gap between a traditional Cyser and a botanical digestif. Built on a foundation of organic apple juice and rich honey, it offers a decadent sensory experience akin to a fine Sauternes. The inclusion of hops introduces an unexpected layer of floral and earthy complexity, providing a structural bitterness that balances the intense natural sweetness. Expect a heavy, velvet-like presence on the palate where tart orchard fruit meets honeyed warmth, culminating in a long, elegant finish reminiscent of a well-aged white port.
Appearance. Deep gold to pale amber; brilliant clarity with no foam or head retention, characteristic of a still, high-gravity mead.
Aroma. High intensity; dominant notes of floral honey and ripe, organic apple juice are complemented by a delicate, spicy hop character. Clean fermentation with noticeable but well-integrated alcohol warmth and no esters.
Taste. Initial impression is intensely sweet and honey-forward, quickly joined by the bright acidity of fresh apple must.
