Marelica is a vibrant Wild Specialty Beer that balances aggressive acidity with the plush essence of French apricot puree. The base, built on a grist of barley, wheat, and oats, provides a soft, hazy canvas for a complex mixed culture of Brettanomyces and Lactobacillus. Aromas of sun-ripened stone fruit lead into a funky, earthy profile of hay and leather derived from months in oak barrels. On the palate, an assertive sourness highlights the bright apricot notes, while the wood aging contributes subtle tannins and a hint of vanilla. It finishes exceptionally dry, with a lingering tartness and a delicate, rustic complexity.
Appearance. Hazy, glowing golden-orange (SRM 5–7) with a thin, fine-beaded white head that dissipates quickly, leaving minimal lacing due to high acidity.
Aroma. High intensity stone fruit bouquet dominated by fresh apricot. Layered underneath are funky Brettanomyces notes of damp hay, leather, and earthy spice, supported by a sharp lactic tang and a soft, woody oak backdrop.
Taste. Immediate, assertive lactic sourness that showcases the French apricot puree without residual sugar. The grain bill of wheat and oats offers a brief bready malt flicker before giving way to complex funk and wood-derived tannins. Finishes bone-dry with a lingering, refreshing tartness.
Mouthfeel. Light to medium-light body with a smooth texture from the oats. Low carbonation as described, featuring a mild oak-driven astringency and a crisp, clean, puckering finish.
