This Straight Sour Beer features a lean, crackery malt backbone that allows the tart, lemony acidity to shine. Appearance. Very pale straw (2–3 SRM). Significant haze from dry hopping. Large, dense, white head with poor retention; effervescent.
Aroma. High intensity lactic sourness is dominant. Moderately-high fruity hop character from Citra and Galaxy featuring notes of lemon, lime, and passion fruit. Low bready, crackery malt; no fermentation byproducts or funk.
Taste. Sharp, clean lactic sourness dominates the initial impression. Significant hop flavors of grapefruit, citrus zest, and peach. Very low bitterness; hop flavor is derived from dry hopping.
