SixºNorth Summer Bliss is a vibrant Wild Specialty Beer that marries the sharp, vegetal tartness of rhubarb with the floral sweetness of ripe raspberries. It pours with a hazy, sunset-pink hue and a delicate, effervescent head. The aroma is a complex blend of lactic acidity, earthy fruit, and a whisper of barrel-aged oak. On the palate, the fruit presence is assertive yet dry, as the fermentation has transformed the fruit sugars into a refreshing, sour profile. With its light body and crisp finish, this ale offers a sophisticated sensory balance of funk, fruit, and wood, perfect for warm-weather sipping.
Appearance. Hazy, light reddish-pink to coral color (8–12 SRM); soft, pink-tinted white head with moderate to low retention; minimal lacing.
Aroma. Moderate to high intensity; sharp lactic acidity followed by earthy, vegetal rhubarb and jammy raspberry notes; low funky Brettanomyces character (leather, hay); subtle oak and vanillin from barrel aging; no hop aroma; very low grainy malt.
Taste. Initial impression is sharply tart; dominant flavors of fresh raspberry and zesty rhubarb; high fruit-derived acidity with zero residual sweetness; low crackery malt backbone; subtle woody tannins from barrel contact; bitterness is nearly absent; finish is bone-dry, clean, and refreshing.
Mouthfeel. Light body; high carbonation providing a prickly, effervescent texture; very low alcohol warmth; slight tannic astringency from fruit skins and oak; no creaminess.
