This Belgian-style Saison presents a sophisticated sensory profile that marries rustic farmhouse traditions with delicate adjunct complexity. The addition of honey provides a subtle floral aromatic lift, which integrates seamlessly with a vibrant bouquet of peppery phenols and citrus esters. On the palate, a unique honeydew melon nuance emerges, providing a soft fruitiness that dances across a lean, grainy malt base. The experience concludes with a long, refreshing citric finish, driven by high attenuation and a firm but balanced bitterness. Its effervescent character and bone-dry exit make for a highly refreshing ale that remains deeply aromatic and complex.
Appearance. Pale gold to soft orange in color (6-9 SRM) with a slight, characteristic haze from being unfiltered. It features a dense, rocky, long-lasting white head that leaves persistent lacing.
Aroma. Moderate to high intensity with a complex blend of spicy black pepper phenols and citrusy esters like lemon and orange peel. A faint floral honey note and low earthy, floral continental hop aromas are supported by a light, crackery malt background.
Taste. Features an initial burst of spicy yeast and pome fruit esters, followed quickly by a distinctive honeydew melon flavor. The malt is soft and grainy but secondary to the fermentation character. It has a moderate hop bitterness and a very dry, long finish with a clean, citric aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that creates a prickly, lively sensation on the tongue. Provides a light, well-integrated alcohol warmth and no astringency.
