This Double IPA celebrates the sensory legacy of Simcoe, delivering an intense profile characterized by resinous pine and vibrant citrus. It pours a deep gold with excellent clarity, releasing a punchy aroma of grapefruit zest and earthy woodsy notes typical of this classic variety. The palate is defined by a clean, assertive bitterness that cuts through a lean malt backbone of light grain and soft toast. Significant hop saturation provides layers of resin and passion fruit that linger into a bone-dry finish. At 8% ABV, it balances substantial hop intensity with remarkable drinkability, showcasing a refined take on the style's historical roots.
Appearance. Gold to light orange-copper (7-9 SRM). Brilliant clarity with a moderate-sized, persistent, off-white head that leaves consistent lacing.
Aroma. High intensity hop aroma dominated by resinous pine, grapefruit, and subtle tropical notes like passion fruit. Supportive, neutral-grainy malt in the background. Clean fermentation profile with a very light, smooth alcohol presence.
Taste. Strong and complex hop flavors of pine, resin, and citrus pith. Very high bitterness that is clean and lacks harshness. Low, unobtrusive malt character with a hint of breadiness. Finishes medium-dry to dry with a long, lingering hoppy aftertaste.
