Ricochet is a vibrant German Pils that bridges the gap between European tradition and West Coast innovation. The foundation is built on crisp, cracker-like malts providing a clean, snappy base. On the hot side, traditional noble hops establish a classic floral and spicy bitterness, but the character shifts dramatically through cold-side additions of Simcoe, Citra, and Nelson Sauvin. These introduce layers of passionfruit, bright citrus, and white grape, elevating the aromatic profile. This hybrid approach results in a brilliantly clear, refreshing lager that finishes dry with a firm, lingering bitterness and sophisticated hop complexity.
Appearance. Pale gold (3 SRM) and brilliant clarity. Pours with a dense, frothy white head that exhibits excellent retention and leaves intricate lacing on the glass.
Aroma. High aromatic intensity. A modern profile of passionfruit, grapefruit, and crushed gooseberry from Simcoe, Citra, and Nelson Sauvin is balanced by underlying floral and herbal noble hop notes. Low grainy-sweet, doughy malt character with a hint of toasted cracker. Exceptionally clean fermentation profile.
Taste. Initial malt flavors of honey and cracker are quickly overtaken by an assertive hop bitterness. Mid-palate reveals complex notes of citrus zest, pine resin, and white wine. The balance is decidedly bitter, leading into a crisp, bone-dry finish. Aftertaste is clean with lingering resinous hop character and a hint of flinty minerality.
Mouthfeel. Medium-light body with a snappy, refreshing texture. High carbonation provides a lively mouthfeel. A very light, well-integrated alcohol warmth is present, though it remains highly drinkable without any harshness or astringency.
