Sir Hopper Red IPA showcases a sophisticated interplay between a robust malt bill and a heavy resinous character. Four specialty malts create a copper-hued foundation with rich caramel aromas that support a prominent tribute to Simcoe hops. This specific hop variety drives the aromatic profile with intense notes of fresh pine, woodsy resin, and a hint of floral spice. On the palate, the assertive bitterness of an American IPA is rounded by the sweetness of the malts, preventing the pervasive resin from becoming harsh. Subtle fruit esters linger in the background, leading to a balanced finish that remains decidedly hop-forward.
Appearance. Medium reddish-amber to copper color (SRM 12–15). Clear with a medium-sized, off-white head showing good persistence and light lacing.
Aroma. High intensity hop aroma dominated by resinous pine and herbal notes from Simcoe, complemented by floral and peppery spice. Supporting medium-low malt character features toasted caramel and dark sugar. Low fruity esters are present.
Taste. Initial caramel sweetness gives way to aggressive hop flavors of pine needles and damp earth. A medium-high bitterness provides a firm backbone. Subtle background fruitiness provides a buffer against the resin. Finishes medium-dry with a lingering bitterness and a supportive malt echo.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate-high carbonation. Very light, smooth alcohol warmth is well-integrated without any harshness or astringency.
