Siphon Brewing’s Codex reimagines the classic Belgian Blond Ale by infusing it with a vibrant, modern hop profile. The aromatic foundation features the characteristic fruity-spicy complexity of Belgian yeast, but it is elevated by generous additions of Motueka hops. These New Zealand hops contribute a striking sensory layer of freshly crushed citrus and a distinct “Mojito” lime character, supported by subtle tropical fruit undertones. The palate follows with a smooth, grainy-sweet malt presence that balances the bright hop profile. Despite its 6% ABV, the beer remains approachable and refreshing, finishing remarkably dry with a lingering hint of spicy-citrus zest and soft, lively carbonation.
Appearance.Deep gold color (5-6 SRM). Brilliant clarity with a large, dense, creamy white head that exhibits excellent retention and classic Belgian lacing.
Aroma.Moderate to high intensity featuring prominent lime zest and crushed citrus from the Motueka hops, complemented by tropical fruit notes. The yeast contributes a sophisticated layer of spicy-peppery phenols and orange esters, supported by a light, grainy-sweet malt base.
Taste.Initial impression is of smooth, grainy-sweet malt and light honey-like sweetness. This is quickly overtaken by vibrant hop flavors of lime and tropical fruit. The fermentation character adds subtle spicy phenols and orange esters. It possesses a moderate bitterness that is well-balanced by the malt, finishing very dry and clean with a lingering lime-like freshness.
Mouthfeel.Medium body with high carbonation that creates a lively, mouth-filling bubbly sensation. The texture is smooth and somewhat creamy, accompanied by a very light, well-integrated alcohol warmth.
