This Double IPA delivers a vibrant sensory jolt, driven by a massive dry-hop regimen of Strata, Mosaic, and Simcoe. The profile is dominated by a tropical intensity, featuring layered notes of ripe mango and sweet pineapple balanced by a sharp, zesty grapefruit punch. A clean, neutral malt base allows these modern hop varieties to shine, providing just enough structure to support the aggressive bitterness. Subtle resinous pine from the Simcoe anchors the brighter fruit tones, leading into a dry, crisp finish with a lingering hop perfume. It is a bold, high-impact ale that balances its 8.1% strength with exceptional drinkability.
Appearance. Pours a brilliant deep gold to light copper (approx. 7-10 SRM) with a persistent, frothy white head that leaves significant lacing. Clarity is high, with only a faint, crystalline haze from the heavy hopping.
Aroma. High intensity hop aroma featuring prominent mango, pineapple, and citrus zest. Secondary notes of resinous pine and a hint of berry emerge. Malt is clean and grain-like in the background, with a very low, clean alcohol presence and light fruity esters.
Taste. Leading with a punch of grapefruit and tropical fruit, the palate reflects the aroma's mango and pineapple focus. Bitterness is very high but smooth, never harsh. The malt flavor is low and unobtrusive, providing a soft bready foundation. Finishes very dry with a long-lasting, resinous hop aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high, providing a lively prickle on the tongue. A gentle, well-integrated alcohol warmth is present, without any hop-derived astringency.
