Pay It No Mind is a vibrant, juice-forward Hazy IPA that showcases a sophisticated hop profile. The combination of Citra, Mosaic, and Eclipse hops drives an intense sensory experience defined by ripe pineapple and mixed summer berries. A supportive, neutral grain bill allows these New World varieties to shine, offering a lush, tropical fruit salad character with hints of mandarin zest. The palate is defined by a soft, pillowy texture and a restrained bitterness that prioritizes a succulent, juicy sensation over sharp lupulin bite. This expressive collaboration balances bright citrus and berry sweetness with a clean, smooth finish.
Appearance. Pale gold with a soft orange hue (SRM 5); opaque and uniformly hazy with a glowing quality. Features a thick, rocky, meringue-like white head with high retention and decorative lacing.
Aroma. High intensity hop aroma dominated by crushed pineapple, sweet mango, and a distinct forest berry character. Secondary notes of mandarin orange and lime zest are prominent, supported by a light, bready, and neutral malt backbone without any caramel or toast.
