This unique German Pils distinguishes itself with a rich amber hue and a specialized infusion of Cardo Rojo de Agreda, which provides a distinctive, earthy bitterness. The use of premium Castilian barley malt produces a more robust malt backbone than typical for the style, offering toasted cracker notes and a subtle, unexpected fruitiness. Fermented at low temperatures for a clean profile, the beer balances its grainy sweetness with a sharp, lingering hop and vegetable bitterness. The result is a medium-bodied, artisanal lager that emphasizes local terroir while maintaining the crisp, refreshing finish expected of a traditional bitter lager.
Appearance. Amber to light copper (10–14 SRM), showing brilliant clarity. Pours with a dense, creamy, off-white head that exhibits excellent retention and fine lacing.
Aroma. Moderate intensity with a blend of floral and spicy hop notes. The malt character is pronounced, featuring toasted grain and light honey from the Castilian malt. Subtle fruity esters are present, accompanied by a faint, unique herbal quality derived from the thistle infusion.
Taste. Initial toasted malt flavors and grainy sweetness are rapidly overtaken by a firm, crisp bitterness. The hop profile is herbal and slightly woody, complemented by the specific earthy and vegetal bitterness of the thistle. Finishes very dry and clean with a persistent, refreshing bitter aftertaste and a touch of mineral character.
Mouthfeel. Medium body, providing more weight than a standard pale lager. High carbonation offers a crisp, lively mouthfeel. Smooth and clean with no harshness, though the bitterness is assertive and lingering.
