This Belgian Single presents as a remarkably flavorsome table beer that defies its 2.9% ABV. Built on a foundational grist of Maris Otter and Munich malts, it offers a surprisingly sturdy malt backbone. The sensory profile is defined by a sophisticated hop marriage; the spicy, floral elegance of Celeia meets the punchy, new-world citrus of Centennial and resinous depth of Simcoe. Aromas of grapefruit and fresh grass transition into a palate featuring delicate sherbet and herbal pine. Despite its sessionable strength, it maintains a satisfying presence, finishing bone-dry and crisp with a refreshing, brisk carbonation.
Appearance. Pale straw (2–3 SRM) with excellent clarity and a moderate, persistent, billowy white head that leaves fine lacing on the glass.
Aroma. Moderate intensity featuring bready and lightly toasted grain notes from the Munich malt. The hop profile is complex, blending floral citrus with herbal spice and a hint of grapefruit. Low peppery phenols and subtle pear esters provide a classic fermentation character.
Taste. Initial bready and honeyed biscuit malt flavors are quickly overtaken by hop-forward notes of grapefruit pith, fresh grass, and a touch of herbal pine. Bitterness is low-moderate but assertive enough to balance the light malt. The finish is very dry, crisp, and clean with a lingering citrus zest aftertaste.
Mouthfeel. Medium-light body that feels remarkably round and satisfying for the low gravity. Carbonation is medium-high and brisk, providing a refreshing prickly sensation. No alcohol warmth is present.
