Simple Things Fermentations Saison Calypso
This 6% Saison offers a complex sensory bridge between old-world tradition and modern hop-forward profiles. Built on a rustic foundation of Pilsner malt, wheat, and spelt, it provides a soft, grainy base for a vibrant hop bouquet. Traditional Saaz and Celeia hops lend a delicate floral and spicy backbone, while a generous dry-hopping of Calypso introduces punchy aromas of pear, lemon, and grapefruit. The fermentation profile adds layers of bubblegum and banana bread, accented by clove and white pepper phenols. Effervescent and slightly tart, it finishes bone-dry with a lingering floral note and a distinctive hint of tropical coconut.
Appearance. Pours a pale gold to light orange (approx 6 SRM) with a dense, long-lasting, rocky white head that leaves significant Belgian lace. The appearance is hazy and unfiltered, reflecting the high protein content from the wheat and spelt.
Aroma. High aromatic intensity featuring a cocktail of pome fruit and citrus—specifically pear, lemon, and grapefruit—driven by the Calypso dry-hopping. Yeast esters contribute moderate bubblegum and banana bread notes, while phenols provide a spicy counterpoint of clove and white pepper. The malt provides a light, rustic graininess.
Taste. The initial impression is a juicy fruit burst of pear and citrus, transitioning into a soft, grainy malt palate. Hop flavors are moderate, blending the spicy, floral character of Saaz and Celeia with tropical fruit notes. Bitterness is moderate and firm, balancing a slight lactic-like tartness. The finish is exceptionally dry and crisp with a lingering peppery aftertaste.
Mouthfeel. Light-bodied with very high, effervescent carbonation. The mouthfeel is crisp and refreshing with a faint, well-integrated alcohol warmth. No astringency is present despite the dry finish.

Simple Things Fermentations say “We’ve done a few Saisons now and they’ve always been well received but I think this one’s going to be our most popular. The balance of fresh fruity flavour to peppery Saison character makes it a very tasty, enjoyable beer with plenty of easy drinkability.
“We’ve used a classic Pilsner + spelt + wheat grain bill with Celeia and Saaz in the kettle, then fermented with a clean farmhouse yeast strain to create a solid base in the Saison Dupont mould; light and crisp but full-bodied with a bubblegum fruitiness. Dry hopping works best when the flavours added resonate with those already there and this is a textbook example of that; doubling down on the apple, pear and citrus notes to amplify the fruity elements of the beer while maintaining the overall balance. Calypso really is the perfect hop for the job and I don’t think we’ll ever not use it now! The end result is exactly what we were aiming for; light and fresh with balance and complexity.”
