This American IPA presents a vibrant hop-forward profile, driven by a heavy-handed application of whole cone Chinook, Nelson Sauvin, and Citra. The sensory experience opens with an intense bouquet of tropical fruit and distinct white wine notes, layered over a subtle foundation of resinous pine. On the palate, the addition of malted and flaked oats introduces a silky, creamy sweetness that tempers the hop intensity. Supported by a soft water profile and natural carbonation, the beer maintains a smooth, rounded mouthfeel before culminating in an assertive, clean bitterness that defines its character. It is a refreshing, aromatic, and expertly balanced exploration of modern hop expression.
Appearance. Color is medium gold (approx 7 SRM) with a slight haze from significant dry-hopping and oat additions. Pours with a medium-sized, off-white head that demonstrates good persistence and leaves light lacing on the glass.
Aroma. High intensity hop-forward aroma featuring punchy tropical fruit, crushed white wine grapes, and gooseberry. A subtle background of resinous pine provides depth. Malt character is low and clean, showing a faint grainy sweetness with a soft, oat-like neutrality. Clean fermentation profile with no significant yeast esters.
Taste. A punchy initial impression of tropical fruit and citrus citrus gives way to complex white wine and subtle pine flavors. Low, clean grainy malt flavor is present, featuring a distinct but restrained creamy sweetness from the flaked oats. Bitterness is assertive and medium-high, providing a firm structure. The finish is medium-dry and crisp, with a lingering, clean hoppy bitterness and a supportive malt backbone.
Mouthfeel. Medium body with a notably smooth, rounded, and creamy texture derived from the use of oats and a soft water profile. Carbonation is moderate to high, providing a crispness that balances the creaminess. No alcohol warmth is perceived, and there is no astringency.

Description

A 5% IPA brewed with whole cone Chinook hops in the kettle and dry hopped generously with Nelson Sauvin and Citra. This beer is all about the hops, with fresh, punchy aromas of tropical fruit bursting from the glass, along with a blend of crisp white wine and subtle pine notes. 

Simple Things say “For the big 30 in our ever-evolving Big Ideas Series we decided it was high time we gave the people what they want. Shop keepers and bar managers rejoice – we’ve done a 5% hoppy beer!

“Hops and drinkability are what this beer is all about. We used the same hopping regime as we employed for our 6.8% IPA and applied it to a 5% base, adjusting the bitterness in proportion to the ABV. Hence the name – it’s an IPA in all but alcohol content. A bit strong to be called a Session IPA, a bit too bitter and hoppy to be a Pale Ale; Mini IPA describes it perfectly.

“While our big IPA recipe forms the basis of this beer, we’ve taken the opportunity to change the hop varieties up a bit. Whole cone Chinook replaces Amarillo, added to the kettle in stages as we did previously to fix a dense and complex citrus/pine flavour at the heart of the beer. On top of this we’ve again dry hopped twice – during and after primary fermentation – this time with Nelson Sauvin, seemingly enjoying a bit of a renewed popularity right now for its delicious white wine and gooseberry profile; and Citra, because, well, Citra. As usual, there’s a soft and rounded water profile that we’ve leaned into here with the addition of malted and flaked oats, and balanced with dry and moderately bitter finish. It looks great too, with a creamy, white foam that persists right down the glass, lacing the sides as it goes.

“This is probably the most commercial and least quirky beer we’ve produced to date – pale, punchy and hoppy with a sensible ABV. We’re feeling so confident people will like it we’re already brewing it again this week!”
