Simple Things Fermentations Brett Spruce 80/- is a sour dark beer. It reminds me of the sour malty beers that the likes of De Dolle in Belgium excel at.
The ‘clean’ regular version of this beer is an annual favourite, marrying the crisp caramel notes of a Scottish Export with the resin-citrus of young spruce tips, harvested from Whitelee Forest a few miles from the brewery.
This bretted version takes things to the next level. A batch of the regular beer has been aged in a barrel with STF’s house culture, and a fruity funk has developed which builds complexity and adds a tropical twist.
Phil from Simple Things says “This is the third in our mini-run of Wild Style mixed ferm releases; these beers are consistently our highest rated and tend to go fairly quickly. I’m not aware of any other mixed ferm 80 Shillings, with or without spruce tips, so if you fancy trying one, now’s your chance!”
