NEIPA - New England IPA 6.9 º
The Sun Is Gone is a vibrant Hazy IPA that showcases the distinct character of the Australian Eclipse hop. This single-hop expression leads with intense aromas of juicy, ripe mandarin and sweet honeydew melon, layered over soft notes of fresh peach. The mouthfeel is characteristically plush and medium-bodied, supporting a complex palate where the citrus sweetness is tempered by a subtle, grounding pine resin bitterness. These resinous cues provide a clean, structured finish that balances the lush fruit profile. Brewed to 6.9% ABV, it maintains excellent drinkability with a soft, pillowy texture and a lingering tropical brightness that defines the style.
Appearance. Straw to light amber (4-6 SRM) with a deep, opaque haze that creates a luminous shine. It pours with a dense, rocky, meringue-like white head featuring excellent retention and thick lacing.
Aroma. High intensity aromatics dominated by sweet citrus and tropical fruit. Pronounced notes of mandarin zest and ripe cantaloupe are complemented by soft stone fruit esters. A very low, bready malt presence sits in the background, entirely free of caramel or toasted notes.
Taste. The palate is an explosion of ripe mandarin and peach, following the aroma's lead. The malt provides a neutral, slightly grainy foundation that allows the Eclipse hops to shine. Bitterness is moderate but perceived as soft and well-integrated, concluding with a light touch of pine resin. The finish is off-dry, clean, and fruit-forward.
Mouthfeel. Medium-full body with a soft, silky, and pillowy texture. Carbonation is moderate, enhancing the juicy sensation without becoming prickly. A light, well-integrated alcohol warmth is present, reflecting the 6.9% ABV without any harshness.
