SIMA brewing Choxymoron
Choxymoron presents a sensory paradox, appearing as a deep, opaque black pour while maintaining the vibrant, hop-forward profile of a Specialty IPA. The nose is led by the punchy citrus and tropical fruit notes of Citra and Amarillo hops, layered over a subtle, toasty foundation. On the palate, the Chocolate malt provides a smooth, dark chocolate impression and a hint of roasted bitterness without any acrid or burnt notes. Bright grapefruit and orange zest flavors from the hops slice through the malt, leading to a crisp, dry finish. It expertly balances the visual soul of a stout with the bitter, fruity heart of a classic American IPA.
Appearance. Deep ebony to black (35-40 SRM); opaque in the glass with a persistent, creamy, light tan head that leaves moderate lacing.
Aroma. High intensity hop aroma featuring notes of grapefruit, sweet orange, and tropical fruit. Low to moderate malt character provides hints of milk chocolate and toasted bread. Clean fermentation profile with no discernible esters.
Taste. Initial impression of clean, firm bitterness. Moderate hop flavors of citrus zest and floral resin from Citra and Amarillo. The malt provides a supportive, smooth chocolate character and a light roastiness that avoids being ashy or burnt. Finishes dry and crisp with a lingering citrus and cocoa-nib aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation. A very light, well-integrated alcohol warmth is present but not distracting.
