This West Coast-style American IPA serves as a concentrated showcase for the Simcoe hop variety. It opens with an aggressive sensory profile defined by pungent resinous pine and sharp grapefruit zest, characteristic of the Pacific Northwest. Subtle notes of passion fruit and earthy spice emerge as the beer warms, supported by a lean, clean malt backbone that allows the hop oils to dominate. At 7.1% ABV, the beer carries a well-integrated warmth that enhances the hop aromatics without overwhelming the palate. It concludes with a crisp, decidedly dry finish and a lingering, firm bitterness that defines its classic regional character.
Appearance. Medium gold with brilliant clarity. Features a medium-sized, persistent white head with excellent lacing.
Aroma. High intensity hop aroma dominated by Simcoe characteristics including pine, resin, and grapefruit peel. Low, clean, grainy maltiness provides a neutral background. Fermentation profile is clean with no significant esters.
Taste. Initial impression is hop-forward and bitter. Prominent flavors of resinous pine, citrus rind, and a light tropical edge. Low grainy-sweet malt flavor with minimal caramel. Finish is medium-dry to dry with a lingering, clean hop bitterness and no harshness.
Mouthfeel. Medium body with a smooth, slightly oily texture. Moderate-high carbonation and a very light, smooth alcohol warmth.
