This West Coast IPA showcases a vibrant collision of classic and contemporary hop profiles. Utilizing Chinook from Roy Farms and the unique Anchovy hops from Segal Ranch, the profile opens with sharp, resinous pine and grapefruit zest. This traditional backbone is layered with the surprising red berry and watermelon candy notes characteristic of the Anchovy variety. A clean, grainy malt base provides a lean canvas, ensuring the high bitterness and dry finish remain crisp. The result is a modern American IPA that balances aggressive forest-floor spice with refreshing, bright fruitiness and a brilliant, clear presentation that emphasizes hop-derived complexity over sweetness.
Appearance. Medium gold to light amber (approx. 7–9 SRM). Brilliant clarity with a dense, persistent white head that leaves significant lacing on the glass.
Aroma. Intense hop-forward bouquet featuring prominent notes of dank pine and spicy resin from the Chinook, layered with distinct watermelon, strawberry, and subtle floral notes from the Anchovy hops. Low, cracker-like maltiness supports the hops, while the fermentation profile remains very clean.
Taste. High hop bitterness dominates from the start, showcasing flavors of grapefruit peel and woodsy pine that transition into a mid-palate of ripe red berries. The malt character is low and grainy, providing just enough support to balance the bitterness. The finish is very dry and crisp with a lingering, resinous aftertaste.
Mouthfeel. Medium body with a smooth, non-astringent texture. Moderate-high carbonation provides a prickly, refreshing mouth-scrubbing effect. Very light, well-integrated alcohol warmth is present.
