Sierra Nevada Bigfoot is a powerful American Barleywine defined by its intensity and exceptional cellarability. This classic "beast of a beer" features a robust foundation of bittersweet malt that yields complex layers of toasted nuts, light chocolate, and dark plum. This rich character is aggressively countered by massive additions of whole-cone Pacific Northwest hops, delivering pungent resinous and citrusy aromas. The palate is dense and sophisticated, transitioning from a malty, grainy sweetness to a lingering, firm bitterness. With its significant alcohol presence and velvety texture, it offers a refined intensity that evolves gracefully, shifting from a hop-forward profile to a more integrated, sherry-like maturity over time.
Appearance. Deep reddish-brown to copper with brilliant ruby highlights (15–18 SRM). Topped by a moderately large, light tan head with fair retention; exhibits noticeable legs upon swirling due to high alcohol content.
Aroma. High intensity. Assertive resinous, piney, and citrusy hop notes dominate, supported by a rich malt backbone of toasted bread, caramel, and hints of dark fruit esters like plum. A clean, smooth alcohol warmth is present.
Taste. Bold and complex. Initial bittersweet malt richness provides flavors of toast and nuttiness with a faint chocolate edge. This is met by aggressive hop bitterness (approx. 90 IBU) and flavors of grapefruit zest and resin. While the malt is forward, the balance remains firmly bitter. The finish is long, warming, and slightly dry.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is moderate. A smooth but significant alcohol warmth is evident, though it remains well-integrated without being harsh or burning.
