This patient aging with indigenous yeasts and bacteria yields a complex sensory profile defined by a rustic, earthy funk and bright stone fruit esters. The oak provides a subtle structural backbone without overshadowing the beer's farmhouse soul. On the palate, it is exceptionally dry and effervescent, showcasing the high attenuation characteristic of wild fermentation.
