This complex Fruit Lambic showcases a sophisticated marriage of spontaneous fermentation and viticulture. Aromas of barnyard funk, wet hay, and aged oak lead into a vibrant profile driven by the addition of Tai Rosso grapes. The 24-month oak barrel aging imparts a structured tannic backbone and subtle woody notes that complement the sharp lactic acidity. On the palate, fermented red fruit flavors of wild strawberry and cherry intertwine with earthy, leathery notes typical of traditional coolship production. It finishes exceptionally dry and vinous, with a lingering tartness and a refined, wood-derived complexity reflecting its long maturation in the cellar.
Appearance. Deep reddish-copper with ruby highlights (12-16 SRM). Pours with a delicate, mousse-like pinkish-white head that shows moderate retention. Slight haze is present, typical for unfiltered, long-aged spontaneous fermentations.
Aroma. High intensity; dominant notes of fermented Tai Rosso grapes offering red berry and vinous esters. Complex wild character consisting of horse blanket, goat, and hay. Subtle aged oak provides a woody, slightly spicy backdrop with no hop aroma.
Taste. Assertively tart and acidic with a bone-dry, vinous initial impression. Rich flavors of fermented grapes provide a fruity depth, supported by earthy Brettanomyces character and lactic sourness. Low malt presence and negligible hop bitterness. The finish is long and puckering, with a hint of grape skin tannin.
Mouthfeel. Medium-light body with a lively, effervescent carbonation. A noticeable but well-integrated alcohol warmth is present. Lightly astringent and mouth-watering due to the high acidity and grape skin contact.
