Siemàn Negà is a sophisticated Italian Grape Ale that captures the essence of the Berici Hills through a twelve-month oak maturation and wild fermentation. The use of Garganega grapes, partially dried on the vine, imparts a luxurious bouquet of honeyed apricot, preserved lemon, and delicate stone fruits. Indigenous yeasts introduce a refined wild character, offering whispers of earthy funk and leather that meld seamlessly with soft oak tannins. This unfiltered, bottle-conditioned ale balances a gentle vinous acidity with a structural complexity, finishing dry with a lingering nuance of almond and white flowers, epitomizing the rustic yet elegant intersection of beer and wine.
Appearance. Copper to deep gold (SRM 12-16); off-white head with moderate-low retention; slight haze due to being unfiltered and bottle-conditioned.
Aroma. High intensity with a complex profile of Garganega grapes, featuring honey, peach, and floral blossoms. A moderate wild character provides notes of damp earth and barnyard funk, supported by light oak vanillin and a subtle vinous acidity. Malt is restrained, presenting as light cracker or bread crust.
Taste. Initial impression is vinous and fruit-forward with dried apricot and honeyed grape notes. A moderate lactic acidity provides brightness, balancing the concentrated fruit sugars. Hop bitterness is very low, allowing the wild fermentation character—earthy funk and aged wood—to dominate the mid-palate. The finish is dry and evolving, leaving a lingering almond and white wine aftertaste.
Mouthfeel. Medium body with high carbonation that creates a lively, spritzy sensation. Noticeable but well-integrated alcohol warmth; very low astringency from grape skins and oak tannins.
